This October, We Are Ona will collaborate with Carsten Höller’s Stockholm-based restaurant Brutalisten for a pop-up during Art Basel in Paris, from the 14th to the 20th. Taking place inside an iconic train station, this event will offer a fully immersive monochromatic experience, where the only colors will be those of the food and drinks. Chefs Coen Dieleman and Stefan Eriksson will helm the kitchen, bringing Höller’s Brutalist Kitchen Manifesto to life. The culinary philosophy behind Brutalisten is to let ingredients stand alone, with only water and salt permitted in the creation of each dish, allowing the essence of each element to shine.
Guests will have the option of a six-course lunch or an eight-course dinner, offering a rare opportunity to experience Brutalist cuisine within a uniquely artistic setting during one of the world’s leading art fairs.
