The Hamptons’ top wellness centre collabs with Colombia’s top culinary master
On two exclusive evenings this month, Shou Sugi Ban House will host acclaimed, Bogotá-based Chef Jaime Torregrosa, the Owner & Executive Chef of Humo Negro for collaborative dinners with the Shou Sugi Ban House culinary team led by Executive Chef Sabdiel Cortes.
Named one of “Latin America’s 50 Best Restaurants” in 2023, Humo Negro (meaning ‘black smoke’), highlights Chef Jaime Torregrosa’s unique culinary style, blending Latin American, Nordic and Japanese flavors and cooking techniques, with a focus on sustainable ingredients.
Before opening his own restaurant, Chef Torregrosa traveled the world, working in Michelin-starred restaurants such as Manresa and Grace in the U.S.; Fäviken in Sweden; and Ce Sento in Japan. Inspired by his travels, Chef Torregrosa opened Humo Negro based on the Japanese concept of “izakaya,” meaning “stay-drink-place.” Dishes are served in the center of the table for a shared experience and are accompanied by signature pairings for a unique, multi-sensory meal.
Chef Torregrosa’s cooking aligns uniquely with the culinary philosophies at Shou Sugi Ban House and the Puerto Rican zest incorporated by Chef Sabdiel Cortes. This dynamic pair will serve a seven course menu on both nights, featuring seasonal ingredients and a local wine pairing.
