Magma’s take:
A Tokyo transplant presents a fusion fare in East London’s buzziest chef’s table.
Originally from Maebashi, Yuya moved to Tokyo in his early 20’s pursing a career in the kitchen. Starting off in an Izakaya restaurant he learnt the basics of kitchen life and Japanese cuisine. After 4 years he moved on to learn skills in a bakery followed by time spent in modern European restaurants in Tokyo. Eventually learning the art of sushi before moving to London.
Expect a combination of Japanese & British ingredients mixed with Japanese & European techniques. A unique blend of Yuyas heritage and experience in a broad range of restaurant disciplines.
