Weaving a compelling narrative of Japanese tradition with contemporary European influence, Masaki Sugisaki is the acclaimed chef-owner of modern-Japanese Chelsea favourite, Dinings SW3.

The menu at Dinings tells the story of Masaki’s thirty-year culinary journey, from his family’s traditional kaiseki in Saitmama and the sushi restaurants of Tokyo, to Nobu Berkley Street, London, where his eyes were opened to how his native cuisine could be served outside of Japan. Shaking off the pressure to conform to traditional Japanese refinement, he developed his own boundary-pushing style with the opening of Dinings SW3 in 2017, cementing his name among some of the city’s best. 

At Dinings SW3, delicate fusions between east and western cuisine culminate in elegant gill-to-tail dishes like ‘Hand-Dived Scallop, Cherry Tomato, Scallop Coral Powder, Yuzu Amarillo Vinaigrette’; the produce all rigorously sourced carefully from England’s south coast where he journeys each year to immerse himself in the diversity of seafood available on these shores. 

Lighting up the WildKitchen this summer, Masaki promises to bring the best of Japan to the Wiltshire countryside for one unforgettable weekend, harnessing the impressive live fire possibilities of the set-up with an exceptional menu featuring the likes of ‘Confit Koji Cured Turbot, Charred Mixed Bean, Yuzu Pil Pil Sauce, Cress Salad’ and ‘Sage Miso Marinated Lamb, Koji Cured Summer Vegetables’.

This summer, Guy Ritchie is opening the gates to his Wiltshire estate to a handpicked line-up of some all-time favourite guest chefs. And you.

Introducing eight chefs over eight weekends, WildKitchen x Carousel summer series is a celebration of fire, smoke and ash, as our talented friends bring their creativity to life in the legendary director’s lakeside WildKitchen. Guests – just eighteen at a time – will enjoy a tasting menu cooked exclusively over fire, before spending the night in a newly renovated farmhouse on the estate. There are six double en-suite bedrooms, each decked out in contemporary country style, while breakfast the next day comes with spectacular views of AONB, Cranbourne Chase.
