Ranked No.44 in Latin America’s 50 Best, Humo Negro (‘black smoke’) is the full throttle Colombian izakaya from rock star chef Jaime Torregrosa.
After leading the kitchens of chart topping restaurants like Fäviken in Sweden, Ca Sento in Japan, and El Chato in his hometown of Bogotá, Jaime exploded onto the scene with his debut opening. Inspired by Latin American, Nordic and Japanese flavours, and executed with produce from sustainable Colombian suppliers, bold-flavoured Humo Negro firecrackers include ‘Scallops, Jamón Ibérico Cream‘, ‘Eryngui, Pistachio Sauce, Puffed Rice‘ and ‘BBQ Cod, Tucupi White Bean Purée, Filo Pastry‘.
